指纹图谱技术在食品质量与安全中的应用研究进展

摘    要:指纹图谱技术是指某些成分复杂的物质或组分,在经过适当的处理和分析后,得到的能标识其化学本质特征的色谱图、光谱图或其它可视化的数据。基于指纹图谱技术鉴定食品质量与安全具有模糊分析、特征性、稳定性和重现性好的特点。本文综述了近十年各指纹图谱技术在食品质量与安全领域的研究进展,并分析各种方法的优劣,展望了今后指纹图谱技术在食品领域的发展趋势,以期对指纹图谱技术在食品领域的发展和应用提供参考。

Abstract:Fingerprint technology refers to some complex substances or components, whose chromatogram, spectrum or other visual data can be obtained to identify their chemical essential characteristics after proper processing and analyses. The characterization of food quality and safety based on fingerprint technology has the characteristics of fuzzy analysis, characteristic, stability and reproducibility. In this paper, recent research progresses in fingerprint technology were reviewed, the advantages and disadvantages of various methods were analyzed, and the developing trends of fingerprint technology in food field were prospected, which may provide reference for the development and application of fingerprint technology in food field.
