摘    要:对废铬革屑先进行脱铬预处理 ,再用碱性蛋白酶水解 ,得到胶原蛋白水解产物 ,然后用戊二醛进行改性。研究了 pH值、戊二醛用量、反应时间、温度等对改性的影响 ,确定了用戊二醛改性的最佳条件 ,比较了改性前后胶原蛋白水解产物在乳化性、乳化稳定性、吸水性、吸油性和保水性方面的差别。

Abstract:Chrome shavings were processed with de-chroming agents and then hydrolyzed with alkaline protease. The obtained collagen product was modified with glutaraldehyde. Effect of such factors as pH value, dosage of glutaraldehyde used, reacting time and temperature in the process of modification were studied, and the best conditions of modification were determined. The changes of such properties as emulsification, and emulsion stability, water absorption, oil absorption, water maintenance of the collagen products before and after modification were also compared.
