摘    要:名优浓香型白酒所含呈香呈味物质在乙醇-水体系中形成了颗粒状微观形态。川产浓香型普通白酒具有如何微观形态呢?采用扫描探针显微镜对五种川产浓香型白酒做扫描,做出了AFM扫描图。首次观察到了五种白酒的在AFM扫描图中不同微观形态。

Abstract:The flavor and trace elements in strong aromatic Chinese spirits brand form the granulated micro-morphology in alcohol water system.In this article,Particle shape of AFM in five kinds of Sichuan-made strong aromatic Chinese spirits was scanned by SFM.Formation of small particles by flavor components was discussed for the first time.
