摘    要:扬州船菜是淮扬菜的一个重要组成部分,具有良好的发展前景和巨大的产业拉动作用.扬州应当恢复和重视船菜,实施扬州船菜品牌战略,从而带动地方养殖业、旅游业、餐饮业等相关产业的发展,推动扬州经济的发展.

Abstract:Yangzhou boating dish (served in boats and enjoyed by tourists) is an important component part of Huaiyang cuisine. It has a good developing prospect and can play a great role in promoting the development of various industries. Local governments should pay more attention to resuming boating dish and practise brand strategy for Yangzhou boating dish, thus spurring the development of local corresponding industries, such as aquatics, tourism, food and beverage trade and etc, and at last pushing forward the development of Yangzhou economy.
