| 摘 要： | 综述了已经工业化生产的黄原胶、结冷胶和热凝多糖的历史与现状，重点介绍了三种多糖的应用情况，以及乳酸菌胞外多糖的应用和研究现状，进一步展望了未来细菌胞外多糖的发展趋势和应用前景。

| Abstract: | In this paper, the history and present state of xanthan gum, gellan gum and curdlan which have been industrialized were summarized. This review was focused on the achievements in these EPS mentioned above and application and research in EPS from lactobacillus sp. The developing trends and application prospects of EPS from bacteria were also discussed in this paper. |
