香蕉抗性淀粉的制备工艺及应用研究进展

摘    要:抗性淀粉是指在小肠中不能被消化,但在结肠中可被大肠菌群发酵利用的淀粉及其降解物。抗性淀粉类似膳食纤维,加工性能良好,具有很多生理功能。我国香蕉资源丰富,但缺乏香蕉高附加值产品的开发。概述了香蕉抗性淀粉在国内外的生产方法及其生理功能以及在食品加工中的应用,并对香蕉抗性淀粉的进一步研究作出展望。

Abstract:Resistant starch(RS) was defined as the sum of starch and products of starch degradation not absorbed in the small intestine of healthy individuals.RS was similar to dietary fiber with good processing performance and potential physiologic effects.Banana was an abundant resource in China,but high additional value of banana products were lacked.The production method,physiological function and application in food processing of banana resistant starch were summarized,and further study was prospected.
