纤维素酶法提取豆腐柴叶果胶的初探

摘    要:为了更好地利用豆腐柴资源,深入研究豆腐柴叶果胶的提取技术。本文研究了温度、pH、加酶量、料液比及提取时间对提取率的影响。结果表明,其最佳提取条件为:温度为50℃、pH=5.5的柠檬酸钠—柠檬酸缓冲液、加酶量0.25 g、提取时间60 min、料液比1∶20,其提取率达到了18.51%。为用纤维素酶法提取豆腐柴果胶工艺进一步研究奠定了基础。

Abstract:In order to make better use of Premna resources,the extraction of pectin from Premna was studied deeply.The effction of temperature,pH,enzyme dosage,extraction time on extraction yield and ratio of solid to liquid was aslo studied.The results showed that the best extraction conditions were of temperature 50 ℃,pH 5.5,enzyme dosage 0.25 g,extraction time of 60 min,and solid to liquid ratio of 1:20,and its extraction rate reached 18.51%.
