摘    要:利用高效液相色谱(HPLC)法对甘肃地产9种酿酒葡萄中的花色苷进行了检测分析。在9种酿酒葡萄中共定性检测到9种花色苷(黑比诺除外,共检测到5种)。利用相对百分含量对这9种花色苷进行了比较分析,结果发现,9种酿酒葡萄都以二甲花翠素-3-O-葡萄糖苷含量最高,其他花色苷含量依酿酒葡萄品种不同而各异;利用9种花色苷总峰面积对9种酿酒葡萄所含花色苷总量进行了比较分析,其含量顺序依次为美乐宝石晚红蜜蛇龙珠西拉赤霞珠品丽珠黑比诺马瑟兰;同时,利用4种花色苷对照品所得标准曲线方程对9种酿酒葡萄中的4种花色苷含量进行了定量计算。为甘肃产区酿酒葡萄在花色苷方面的品质评价提供了重要参考依据。

Abstract:The nine kinds of anthocyanins were qualitatively detected by HPLC in the nine kinds of wine grapes (except Pinot Noir, only five kinds were detected). The relative percentage of the nine kinds of anthocyanins was compared, and result showed that malvidin-3-O-glucoside had the high- est content in the 9 kinds of wine grapes, and other anthocyanins content depending on wine grape varieties. Comparative analysis of total antho- cyanins was conducted refer to the total peak area. The anthocyanins content of different varieties in order was Merlot, Gems, Late Red Honey, Gemischt, Syrah, Cabemet Sauvignon, Cabemet Franc, Pinot Noir, Marselen. Meanwhile, the four kinds of anthocyanins in wine grape was quantita- tively calculated with standard curve equation made by the reference substance of four anthocyanins, providing an important reference for grape qual- ity evaluation on anthocyanins in Gansu region.
