| 摘 要： | 传统的遗传学方法虽在育种方面取得一定的成绩，但都存在不足之处。现代基因工程技术由于其育种具有定向性，目前已广泛应用于微生物菌种的改造与构建。利用基因工程可以在不改变啤酒酵母原有酿造特性的条件下，赋予啤酒酵母新的酿造特性。简述基因工程在啤酒酵母育种中的应用情况。

| Abstract: | Compared with traditional breeding methods, modern gene engineering techniqueshave many advantages.They are effective and labo - saving, especially useful in modification special charcters. Gene engineeringtechniques havebeen widely used in micro - organisms breeding. Gene engineering techniques can introduce new brewing characteristicsinto the original superior brewing system without negative effects. The applicatoin of gene engineering techniques in thebreeding of Saccharomyces Cerevisiae was stated in brief. |
