高等烹饪专业应加强管理学课程的教学

摘    要:管理学已渗透到许多领域,社会需要高校培养既有技术又懂管理的人才,因此,高等烹饪教育也应重视管理学课程的教学,进一步加强教材建设,改进教学方法,采取课堂讲授(引导)→课外阅读(拓宽)→集中讨论(检查)的教学模式。

Abstract:Nowadays the knowledge of management science has permeated many learning fields. Society requires that the higher educational institutions of cuisine should cultivate the qualified personnel who not only have a good grasp of techniques but also understand management science. Therefore, higher culinary education ought to pay enough attention to the teaching of the course of management science, strengthen the further construction of its textbooks, improve its teaching methods and adopt a new instruction mode, that is, the combination of three teaching ways: classroom teaching (guidance) - outside reading (extension) - collective discussion (inspection).
