摘    要:采用纤维素酶解法对经过淀粉酶、蛋白酶处理得到的红薯膳食纤维进行生物改性处理,提高水溶性膳食纤维(SDF)的含量,以提高其活性。探讨了改性过程中酶添加量、溶液pH、酶解温度及时间对改性的影响,采用正交法对制备工艺进行优化,得出最佳工艺条件:纤维素酶添加量为1.00%,溶液的pH为4.8,酶解温度为50℃,时间为1.5h,此条件下SDF的含量为15.33%;酶解后,红薯渣膳食纤维的持水力提高了48.35%。
