摘    要:红花油、党参籽油、橄榄油、卡诺拉油和羊脂等五种油脂在我国的习俗上还很少作为食用,了解不多.对其进行甘三酯结构的研究将有助对该油脂等的充分利用.本文采用胰脂酶水解方法,以1,3—随机—2—随机分布假说计算其甘三酯组份,并以银离子薄层色谱法(俗称A_g~+—TLC)分离的情况作进一步验证,研究结果表明两者有较好的一致性.

Abstract:On account of Chinese tradition, some kinds of edible oils and fats such as safflower oil, tangshenseed oil, olive oil, canola oil and mutton tallow are less used as foodstuffs. The chemical constitution and related characteristics of them are known uncertainly by us as yet.In order to fully atilize those oils and fats, as mentioned above, the structure of them must be studied thoroughly. In this paper, the structures of trigiyeerides are determined by the method of pancreatic lipase hydrolysis and the compositions of triglycerides are calculated according to 1 , 3-random-2-random distributive hypotheses. The results, obtained by the enzymatic method, consistant with those of chromatographic bands which are separated by argentation thin layer ehromatography (ABB: Ag+-TLC ) technology, are reliable.
