摘    要:近年来,不法商家为了谋取利益,以食用酒精勾兑酒、添加香精香料等方式冒充固态法白酒的行为在市场上盛行。国家监管部门因缺乏相应的检测技术,使固态法白酒的规范管理成为难题。为了维护消费者利益,打击制假造假行为,保障酒类市场健康发展,本文总结与综述了光谱法、色谱法、电子鼻及同位素质谱法等现代检测技术在固态法白酒鉴别中的应用,以期为固态法白酒真实性鉴别提供参考依据与技术指导。

Abstract:In recent years, in order to obtain benefits, the phenomenon that some illegal merchants sold non-solid fermentation liquor by blending edible alcohol and adding flavors and fragrances has prevailed in the market. Due to the lack of corresponding detection technologies, the national regulatory authorities have made the standard management of solid fermentation liquor difficult. In order to protect the interests of consumers, crack down on counterfeiting, and ensure the healthy development of the liquor market, this article summarized and reviewd the application of modern detection technologies such as spectroscopy, chromatography, electronic nose, and isotope mass spectrometry in the identification of liquor by traditonal fermentation. To provide reference basis and technical guidance for the detection of the authenticity of solid fermentation liquor.
