基于全面质量管理的食品安全企业数据库指标体系构建研究

摘    要:目的构建系统、全面的食品安全企业数据库指标体系,为政府监管及决策提供量化依据。方法基于全面质量管理体系,辅以可持续发展思想,构建出涵盖食品企业全过程、全员和全社会的食品安全企业数据库指标体系。结果从企业自身经营角度出发,该评价指标包括3层评价因素。第一层包括产品质量、全过程控制、客户满意、社会责任和质量可持续5个指标,每个一级指标包含若干二级指标。结论食品安全企业数据库指标体系的构建,帮助食品企业确保产品质量符合管理及市场需要,也为政府整合食品企业生产经营活动中的动态数据、加强对食品加工过程中各环节的把控提供了有力参考。

Abstract:Objective To establish a systematic and comprehensive database index system of food safety enterprises database and provide quantitative basis for government supervision and decision-making. Methods Based on the total quality management system and the idea of sustainable development, a food safety enterprise database index system was established, involving the whole process of food enterprises, all employees and the whole society. Results From the perspective of government regulation, the evaluation indicators included 3 levels of factor. The first levelincluded5 factors: product quality, entire process control, customer satisfaction, social responsibility and quality sustainability, and each first-level factor included several second-level factors. Conclusion Through the construction of the database index system of food safety enterprises, it provides a powerful reference for the government to integrate the dynamic data in the production and operation activities of food enterprises and strengthen the control of all links in the food processing process.
