浅议高职高专《酿酒化学》课程教学内容的选择

摘    要:针对生物技术(酿酒)专业开设的《酿酒化学》课程,应注重贴近专业进行课程内容选择与整合。本文从白酒主要成分、白酒生产原料、白酒酿造过程的主要化学反应三个方面对课程教学内容进行初步选择。符合高职院校学生知识“够用”与“实用”的培养标准,提高了课程教学质量,取得了良好的效果。

Abstract:Wine Chemistry was based on biotechnology (wine) specialty, which was practice -needed curriculum. According to the characteristics of higher vocational students, proper arrangement on the teaching content was important. The teaching content from three aspects was preliminary selected, including the main ingredients, raw materials for liquor production and liquor brewing process of the main chemical reaction, which was in line with the higher vocational college students' knowledge of Enough and Practical training standards, the quality of teaching was improved and good results were achieved.
