摘    要:为了更好地研究饮料中维生素C有氧降解机理,以橙汁饮料,在一定温度下构成流通环境,通过促使维生素C有氧降解的方法,得到橙汁饮料中维生素C在流通环境下的降解情况。研究结果表明,维生素C的降解符合一级反应模型,溶液中的溶解氧在前3d急剧增加,之后趋于平稳,同时还得到了在有顶空气体存在的情况下,橙汁溶液中溶解氧浓度和气体中氧气浓度的变化关系,在一定温度下两者符合线性规律。

Abstract:In order to investigate the kinetics of aerobic degradation of Vitamin C in beverages, with orange juice as the testing material, a circulation environment at a certain temperature was formed, and the methods of promoting the aerobic degradation of Vitamin C were used to obtain the situation of Vitamin C degradation in orange juice under the circulation environment. The findings indicated that the degradation of Vitamin C conformed to a secondary reaction model, dissolved oxygen in the solution had a sharp increase in the first 3 d, and tended to be stable afterwards. At the same time, with the presence of top gas, the variation relationship between dissolved oxygen concentration in orange juice and oxygen density in top gas was also obtained. It conformed to the linear rule at a certain temperature.
