摘    要:柠檬酸作为大宗发酵有机酸之一,被大量应用于食品、制药、洗涤等行业.农产品加工副产物作为原料应用于柠檬酸发酵由于具有成本低,可再生和环境友好等特点,受到了极大的关注.该文总结了近20年关于廉价废弃原料在柠檬酸不同发酵形式中应用的报道,为新型原料的开发提供了一定的理论基础.

Abstract:As an important bulk chemical,citric acid is widely used in food,pharmaceutical and cleaning industries.The utilization of inexpensive agro-industrial wastes and their by-products is receiving more attention due to its low cost,renewability and environmental benefits.This paper reviewed the studies in recent 20 years,which used novel and economical substrates in citric acid fermentation with different techniques.This provides a new perspective to develop new processes for citric acid production.
