摘    要:微生物检测技术对巴氏杀菌乳的质量安全、营养健康及疾病预防具有重要意义.国标规定的菌落总数检测方法需要48h,极大地影响产品货架期,又无法满足消费者对产品新鲜度的要求.采用阻抗法建立曲线方程Y=-1.0307X+9.0268,复相关系数R2=0.9761,与国标法相比,结果准确、可靠,而且检测周期缩短至8h~10h,该方法的应用将对乳品企业的生产和管理发挥重要作用.

Abstract:Microbial detection technology and method in pasteurized milk is important for safety, nutrition and disease prevention. The GB detection method of total number of colonies requires 48 h, which greatly affect product shelf-life and could not meet the requirements in product freshness to consumers. The curve equation (Y=-1.0307X+9.0268) was establish for impedance method, and multiple correlation coefficient was 0.9761. Compared with the GB method, the impedance method is accurate and reliable with reduced detection time of 8h-10h. Application of impedance method will play an important role in production and management of the dairy industries.
