摘    要:以白鲢鱼皮为原料,利用Central-Composite试验设计原则,通过神经网络对胶原蛋白的提取工艺参数进行仿真并利用遗传算法对工艺参数进行优化,得到最优工艺条件:酶解时间94.7min、pH7.6、加酶量0.3%及酶解温度62℃.在此条件下白鲢鱼皮胶原蛋白提平均取率可达61.22%.

Abstract:Using silver carp skin as a raw material, the parameters of extraction were optimized with Central-Composite experimental design and simulated with BP neural network, and the optimum conditions were obtained by genetic algorithm, which were as follows, hydrolysis for 94.7min, pH value 7.6, enzyme addition 0.3%, temperature 55℃. Under these conditions, the extraction rate of collagen from silver carp skin could reach 61.22%.
