紫外诱变选育高产酯酵母

对从酒曲中筛选出的原生香酵母Y菌液经紫外线照射处理后倾注平板培养,挑选长出的直径较大的菌落接种到试管培养,用杜氏发酵管通过产二氧化碳体积进行初筛,再进行发酵总酯复筛获得1株优良菌株Y-16,其发酵产总酯量可达5.12g/L.原始Y的发酵产总酯量为3.24g/L,诱变后产酯总量提高了58％左右,产酯酵母紫外处理的最佳时间为2min.
