棉籽蛋白的研究进展

摘    要:我国棉花产量丰富,棉籽仁提油后的棉籽饼粕中,蛋白质含量高达60%。棉籽蛋白是一种营养价值高、品质优良的植物蛋白,在食品行业有着广泛的应用。介绍了棉籽蛋白的提取和水解的方法,阐述了各种方法的优缺点,并综述了其最新研究进展。

Abstract:Cottonseed protein was an enormous protein resources,and was widely used in food industry.The methods of extracting and hydrolyzing cottonseed protein were introduced.Advantage,disadvantage,and the latest progress of each method were discussed.
