菌核侧耳营养成分分析

摘    要:依据国标分析方法,对菌核侧耳干品中营养成分进行分析测定。结果表明:菌核侧耳中蛋白质含量为15.60%、脂肪2.50%、粗纤维6.30%、粗多糖10.8%、总糖34.60%;矿质元素中钾、钙、铁、锌、硒含量较高,分别为22.4g/kg、768mg/kg、157mg/kg、105mg/kg、0.05mg/kg;氨基酸总含量为14.9%,其中人体必需的8种氨基酸量占氨基酸总量的46.10%,异亮氨酸、赖氨酸、亮氨酸含量相对较高。

Abstract:According to the national standard analytic methods,the contents of several nutritive components of dry pleurotus tuber-regium(Fr.) sing were assayed.The results showed that the content of protein was 15.60% in the edible fungus,fat was 2.50%,fibre was 6.30%,thick polysaccharides was 10.8%,and total candy was 34.60%.The content of K,Ca,Fe,Zn and Se in minerals elements were relatively high,and were respectively 22.4g/kg,768mg/kg,157mg/kg,105mg/kg,0.05mg/kg.The content of total amino acid was 14.9%.Eight kinds of essential amino acid comprised over 46.10% of all the amino acids,and content of LLE,LYS and LEU were relatively higher.
