摘 要: | 介绍了环县典型黄米风味食品—环县黄酒、黄米蒸糕、黄米腊八粥、黄米年糕的来源、主要特性、制作技艺和感官品质,挖掘整理了独特的地方饮食文化内涵。

Abstract: | This article introduced the sources,main characteristics,prodution techniques and quality of typical glutinous millet flavor food Huan in county including millet wine of Huan county,steamed cake,glutinous millet eight porridge,and proso millet cake,and reorganized the unique place diet culture connotation. |
