天然抗氧化肽研究进展

摘    要:天然抗氧化肽具有安全和高效特点,已成为国内外研究热点。肌肽和谷胱甘肽是目前研究较为深入两类低分子肽,并在食品和医药领域得到一定应用。此外,在实验中发现还有很多来自于动植物蛋白提取物,也具有较强抗氧化活性;深入研究并推广使用天然抗氧化物,是解决食品安全问题一条重要途径。

Abstract:Because of the characteristic of safety and antioxidation, natural antioxidation peptides be-come the focus of domestic and foreign studies. At present, carnosine and glutathione are researchedmore deeply and applied in the field of food and medicine. In addition, it was found in experimentsthat many protein extracts from animals and plants show antioxidatant activity to some extend. Deepresearch on natural antioxidatants, as well as broad application of them, is an important way to so-lve the problem of food safety.
