北方窖泥的培养与应用

窖泥是浓香型白酒的基础。人工老窖技术推进了浓香型白酒的发展。北方人工老窖在长期使用中出现窖泥功能退化现象,其原因与窖泥配方、培养方法、窖池养护有直接关系。针对北方气候特征,采用适宜、科学的方法生产人工窖泥,应用于老窖的改造,结果表明,培养的新窖泥对提高酒质和产量效果明显。
