摘    要:固态双型白酒发酵模式是指以传统的浓香型和清香型白酒酿造为基础,借鉴两种香型白酒生产工艺的共同点和独创点以及浓香型白酒酿造车间的现有优势,取长补短,在保证白酒质量和不增加生产场地以及窖池资源的情况下,达到既可大幅度提高单位窖池的出酒率,又可提质增香的目的。

Abstract:The solid fermentation model of double-style liquor had been developed successfully.It was based on traditional fermentation techniques of Luzhou-flavor liquor and Fen-flavor liquor and it had adopted the strong points in the production of both the two liquor types while overcoming their weak points through combining with its existing advantages.After the technical innovation,liquor yield had been increased greatly and liquor quality got improved without any addition of production spots and pits resources.
