摘    要:该研究采用Illumina MiSeq高通量测序技术对襄阳市石花酒大曲中微生物多样性进行分析。结果表明,4个样品中优势细菌门(>0.1%)为变形杆菌门(Proteobacteria)、厚壁菌门(Firmicutes)和放线菌门(Actinobacteria),且均为核心菌门;优势细菌属(>1%)为假单胞菌属(Pseudomonas)、芽孢杆菌属(Bacillus)、乳杆菌属(Lactobacillus)、链霉菌属(Streptomyces)、魏斯氏菌属(Weissella)、明串珠菌属(Leuconostoc)和Kroppenstedtia。优势真菌门(>0.1%)为子囊菌门(Ascomycota)、担子菌门(Basidiomycota)和Mucoromycota,其中子囊菌门为核心菌门;优势真菌属(>1%)为复膜孢酵母属(Saccharomycopsis)、红曲菌属(Monascus)、热子囊菌属(Thermoascus)、青霉菌属(Penicillium)、曲霉属(Aspergillus)和Leiothecium。样品中假单胞菌属和曲霉属呈现显著正相关(P<0.05)。综上,4个石花酒大曲样品中共有大量的核心菌群,且样品中细菌与真菌有一定的相关性。

Abstract:In this study, the microbial diversity in Shihua Baijiu (Chinese liquor) Daqu in Xiangyang was analyzed by Illumina MiSeq high-throughput sequencing technology. The results showed that the dominant phyla of bacteria (>0.1%) in 4 samples were Proteobacteria, Firmicutes and Actinobacteria, which were core bacteria phyla. The dominant bacteria genera (>1%) were Pseudomonas, Bacillus, Lactobacillus, Streptomyces, Weissella, Leuconostoc and Kroppedtia. The dominant phyla of fungi (>0.1%) were Ascomycota, Basidiomycota and Muscomycota, among them, the Ascomycota was core fungus phylum. The dominant genera of fungi (>1%) were Saccharomycopsis, Monascus, Thermoascus, Penicillium, Aspergillus and Leiothecium. There was a significant positive correlation between Pseudomonas and Aspergillus in the sample (P<0.05). In conclusion, there were a large number of core microflora in 4 Shihua Baijiu Daqu samples and some correlations between bacteria and fungi.
