我国白酒行业发展初探

摘    要:我国白酒产量自20世纪90年代末开始回落,白酒产销地域优势基本形成,以山东、四川、安徽、河南、贵州等为产酒大省;白酒消费群体日益分化,以30岁以上男性为主,低档白酒以本地为主,高档酒以全国为主,白酒消费重心渐向中小城镇和农村转移,消费理念向文化品味等转移。行业发展存在耗粮大,小酒厂盲目发展,企业结构不合理,流通秩序混乱等问题。影响行业发展的因素:一是经济全球化,其他酒种挤占市场份额;二是消费理念和消费文化影响;三是管理模式陈旧,产业布局不合理,非理性市场竞争;四是行业政策和战略性结构调整。应采取措施:一是对白酒骨干企业加大技术改造、污染治理投资;二是限制新上白酒项目;三是加强行业管理和监督;四是加强人才培训,组建技术队伍;五是加快战略升级,包括产业战略升级、品牌战略升级、营销战略升级和文化战略升级。(庞晓)

Abstract:The annualoutput of product liquor in China had been decreasing since late 1990s and several provinces including Shandong, Sichuan, Anhui, He'nan and Guizhou etc. had become the dominant regions for liquor production and marketing; In addition, the char-acteristics of liquor consumption presented in the following aspects: male at the age above 30 is being the main liquor consumers, low-grade liquor usually selled in its native regions and high-grade liquor selled throughout the whole country, the trend of liquor con-sumption gradually shifted from cities to small towns and rural regions, and liquor consumption theories began to elevate to higher lev-els such as the cultural backgrounds of liquors etc.; Besides, the current problems in liquor-making industry were as follows: excessive waste of grains, blind development of small-scale distilleries, irrational construction of distilleries and inorderly marketing etc. The fac-tors influencing the development of liquor-making industry included:1. economic globarization, other wine products would enter the market and take some market share; 2. the changes of consumption theories and consumption cultures; 3. backward production manage-ment, inadequate industrial distribution and irrational market competition; 4. formulation of policies and strategic adjustment of the struc-tures for this industry. The relative solutions were as follows: 1. further technical innovation and more capital input for pollution treat-ment in those national key distilleries; 2.limitation of the development of irrational new liquor-making projects; 3.strengthening industrial management and supervision; 4. more intellectual training courses for employees and formation of expert technical teams; 5. quickening strategic upgrade for distilleries including industry upgrade, brand upgrade, marketing upgrade and cultures upgrade.
