甜玉米酶解液喷雾干燥工艺的研究

摘    要:对甜玉米酶解液的喷雾干燥加工工艺进行了研究,确定了其工艺参数。根据喷雾效果,确定了麦芽糊精为助干剂。在单因素实验的基础上设计了四因素三水平的响应面实验,以麦芽糊精添加量、进口温度、物料流量、热风流量为考察因素,以出粉率为考察指标,对实验数据拟合得到的回归方程进行了统计检验和分析。最佳喷雾干燥工艺参数组合为:麦芽糊精添加量68.5%,进口温度160℃,物料流量743mL/h,热风流量0.5m3/min。在此干燥条件下,出粉率最高为48.65%,并在相同条件下进行了验证实验,实验值在95%的置信区间内很好地符合预测值。

Abstract:The spray drying process of sweet corn hydrolysate was studied,and the process parameters were determined.On the basis of the spray drying effect,the malt dextrin was determined as drying agent.Response surface experiment with four factors and three levels was designed on the base of the single factor experiment results.Maltodextrin addition,inlet air temperature,the material flow,hot air flow were designed as inspecting factors,and yield rate of powder was designed as inspecting index.The regression equation was tested and anaylsed by statistical method.The optimum conditions for the spray drying:Maltodextrin addition was 68.5%,inlet air temperature was 160℃,the material flow was 743mL/h,hot air flow was 0.5m 3 /min.In this experimental condition,the highest yield rate of the products was 48.65%,and the results were verified under this experiment condition,test values at the 95% confidence interval was well consistent with the predicted value.
