碘盐变色机理探讨

摘    要:本文针对近几年频繁出现的碘盐变色现象,从卤水中还原物作用、碘液中稳定剂的作用、包装储存环境和杂质离子的影响4个方面探讨了碘盐变色的机理。并提出了几种防止碘盐变色的措施;通过比较认为还原性卤水适用于还原性的KI作为加碘剂。

Abstract:Based on the frequent color change phenomenon in iodized salt in recent yeats,the authors approaches color change mechanism from the aspect of effect of redtlcer in brlne,effect of stabicizer in iodine solution as well as impact of storage environment and impurity ions,putting forward measures to prevent color change in iodized salt. Through comparison, they hold that it is appropriate to use reducible KI as iodizing reducible in reducible brine.
