Degradation of polysaccharides by immobilized depolymerizing enzymes

Abstract:Polysaccharides in fruit and vegetable juices can be efficiently degraded using co-immobilized amylolytic and pectolytic enzymes combined with naringinase. The enzymes were immobilized on silica carriers for use in fining procedures to remove cloudiness.
