美国地锦色素提取剂的选择及其稳定性影响因素的研究

摘    要:通过实验确定美国地锦色素的提取剂的选择,并测定各种因素对该色素稳定性的影响。结果表明:30%酸性乙醇是美国地锦色素的较好提取剂。实验数据显示:光照、温度、酸碱、氧化还原剂、食品添加剂以及金属离子对该色素的稳定性影响都不大。该色素是稳定性好的食品添加剂。

Abstract:Reagent for pigment extraction in Parthenocissus tricuspidata is studied by experiment. It reveals that 30% acidulous grain alcohol is suitable, superior in the pigment dissolving. Numerical data exhibit that light, temperature, pH value, alkaline or oxidizer reducer, food additives, and metal ion do not influence its stability obviously. This pigment is a good common food additive.
