摘    要:设计了黄瓜浑浊汁(即带果肉饮料)、黄瓜澄清汁及黄瓜乳汁三种产品的生产工艺,并对原料护色、稳定剂的选择及澄清方法等问题进行了分析与讨论。

Abstract:The authors designed the production technology of cloudy cucumber juice,clear cucumber juice and cucumber milk juice,and discussed the color protection in raw materials,the choice of stabilizers and the use of clearing methods.
