白灵菇山楂复合饮料的研制

摘    要:为降低生产成本、提高白灵菇产品的附加值,采用液体发酵法获得平菇发酵液,然后以此为基础与山楂浆混合,调配、研制复合饮料。研究结果表明:白灵菇液体培养最佳条件为:250mL锥型瓶摇瓶装液量为80mL,接种量为15%,pH值为6.5,摇瓶转速180r/min,在25℃培养8d。白灵菇山楂复合饮料的最佳配方为:发酵液添加量为20%,山楂浆添加量为15%,蔗糖添加量为10%,总酸含量为(以柠檬酸计)0.4%。

Abstract:In order to cut down cost and enhance the added value of Pleurotus nebrodensis product, the compound beverage with Pleurotus nebrodensis and Hawthorn is studied. The experiment with liquid fermentation confirmed the optimal conditions for the culture of Pleurotus nebrodensis liquid as the followings:broth content for 250 mL conical flask is 80 mL, inoculation amount 15 %, pH 6.5, rotate speed 180 r/min, temperature 25℃, time 8 d. And the optimal ingredients for the compound beverage with Pleurotus nebrodensis and Hawthorn were set as the followings:the addition of fermentation liquid 20% ,the addition of Hawthorn 15% ,the addition of Sucrose 10% ,the content of total acid ( citric acid) 0.4% .
