| 摘 要： | 柚皮中含有丰富的活性物质,具有较高的保健和药用价值.如能对柚皮进行综合开发利用,变废为宝,将产生良好的经济和社会效益.本文综述了柚皮中黄酮类化合物、果胶、多糖、膳食纤维、香精油及色素等天然活性成分提取工艺的研究进展.

| Abstract: | Containing abundant physiological active substances, pomelo peel has a high value on health care and medicine. The deep processing of pomelo peel not only can make waste profitable, but also have good value on economical and social benefit. This paper summarized the research progress on extraction technology of flavonoids, fruit gum, active polysaccharides, dietary fiber, essential oil, uranidin and other natural active ingredients in pomelo peel. |
