摘    要:分子蒸馏技术是一种新型、高效的分离技术,现已在许多领域得到广泛应用.本文介绍了分子蒸馏的概念、原理、特点以及影响分子蒸馏速度的因素;其中着重论述了分子蒸馏技术目前在食品工业中的应用发展情况.最后本文对其发展状况及应用前景进行了分析和展望.

Abstract:Molecular distillation as a new and high efficiency separation technology has been widely used in many fields.This paper reviews the definition,principle and character of molecular distillation and the factor influencing molecular distillation velocity,and especially introduces the development and application of this technology in food industry.Finally,this paper describes the analysis of the development and the application prospect of molecular distillation.
