微波处理油料对油脂品质影响的研究进展

摘    要:介绍分析了微波处理油料对出油率、原料本身结构、油脂主要理化指标、油脂脂肪酸组成及微量成分和油脂氧化稳定性的影响.结果指出微波处理油料可提高出油率和油脂氧化稳定性,增加营养成分含量,值得推广应用.

Abstract:The effects of microwave treatment of oilseeds on oil yield,the structural of oilseeds,main physicochemical indexes,fatty acid compositions,trace nutritional components and oxidation stability of the oil were analyzed.Microwave treatment of oilseeds could increase the oil yield,oxidation stability of the oil and the content of nutritional components.The microwave treatment of oilseeds should be widely applied.
