摘    要:采用测定软化液中总蛋白含量及羟脯氨酸含量的量化方法与感官评价方法相结合 ,研究了在猪裸皮软化过程中各种软化条件对 EB- 1酶软化性能的影响。试验结果表明 :当 EB- 1酶用量低时 ,升高温度有利于非胶原蛋白的溶出 ,而用量较大时 ,升高温度对胶原纤维的水解影响较显著 ;在试验范围内 p H值的改变对 EB- 1酶水解胶原纤维的影响不显著 ,具有较宽的 p H使用范围 (7.7- 8.5 )。通过定量分析和感官评价试验结果的比较表明 :可以用测定软化液中总蛋白含量和羟脯氨酸含量的方法来表征酶对裸皮的软化性能

Abstract:The bating properties of EB-1 enzyme were studied while it was used in pigskin bating process through two evaluation methods as the sensory evaluation and the determination of the total protein content and the hydroxyproline content in the bated solution. The results showed that when EB-1 enzyme was used below 0.4%,increasing temperature could aid in solving non-collagen protein from the pelt, when the enzyme was used high than 0.4%,increasing temperature had obviously effect on the hydrolytic action to collagen. The results also showed that EB-1 enzyme can be used under broad pH ranges from 7.7 to 8.5. The conclusion from quantitative determination and sensory evaluation showed that the bating properties of the enzyme could be determined by quantitatively detecting the total protein content and the hydroxyproline content in the bating solution.
