美国地锦色素提取剂的选择及其稳定性影响因素的研究

摘    要:通过实验确定美国地锦色素的提取剂的选择,并测定各种因素对该色素稳定性的影响。结果表明:30%酸性乙醇是美国地锦色素的较好提取剂。实验数据显示:光照、温度、酸碱、氧化还原剂、食品添加剂以及金属离子对该色素的稳定性影响都不大。该色素是稳定性好的食品添加剂。

Abstract:Reagent for pigment extraction in Parthenocissus tricuspidata is studied by experiment.It reveals that 30% acidulous grain alcohol is suitable,superior in the pigment dissolving.Numerical data exhibit that light,temperature,pH value,alkaline or oxidizer reducer,food additives,and metal ion do not influence its stability obviously.This pigment is a good common food additive.
