电化学发光法在食品分析中的应用

摘    要:随着社会的发展、环境的改变及人类生活的进步,食品安全问题越来越受到人们的关注。民以食为天,食品检测方法的研究与食品安全问题的解决息息相关。目前检测食品的方法有高效液相色谱法、酶联免疫吸附法、荧光检测法、光度法等,电化学发光分析法兼具电化学分析法和化学发光法的优点,背景噪音低、灵敏度高、选择性好、可控性强及设备简单,已广泛应用于食品营养成分、食品添加剂及食品污染等检测中。本文主要介绍了电化学发光分析法在食品检测中的应用,包括食品中营养成分、有机污染物、无机化合物、致病菌的检测及食品中其他方面的应用等,并对电化学发光分析法发展趋势及前景进行了概述。

Abstract:With the development of society, the change of environmental and the progress of human life, food safety issue has received more and more attention. Food is the paramount necessity of the people. The study of food detection method is closely related to the solution of food safety. There are many methods for food detection, such as high performance liquid chromatography, enzyme-linked immunosorbent assay, fluorescence polarimetric method, spectrophotometry and so on. Electrochemical luminescence analysis is a combination of electrochemical analysis and chemiluminescence, with low background noise, high sensitivity, good selectivity, controllability and simple equipment. It has been widely used in the detection of food nutrition, food additives and food contamination. This paper mainly introduced the application of electrochemical luminescence analysis in food detection, including the analysis of nutrients, organic pollutants, inorganic compounds, pathogens in food and other aspects of the application in food detection, and summarized the development trend and prospect of electrochemical luminescence analysis.
