唐山市市售干制水产品甲醛含量调查分析

目的了解唐山市市售干制水产品甲醛含量。方法采集唐山市内四区(路北区、路南区、开平区和凤凰新区)的4大类水产品(鱼类、虾类、贝类和海产头足类软体动物)的干制品,共计101份样品。采用中国水产行业标准SC/T 3025—2006中规定的乙酰丙酮分光光度法测定甲醛含量;采用SPSS 13.0统计软件进行数据分析;本文暂以刘淑玲等1]推荐的水产品甲醛限值(30 mg/kg)为标准计算不合格率。结果干制水产品中普遍存在甲醛,甲醛检出率为100%。甲醛含量范围在0.75～483.26 mg/kg之间。全部样品中超过30 mg/kg的有30份,占29.70%。甲醛含量最低与最高的样品分别为对虾干和海米。不同种类样品的甲醛不合格率差异有统计学意义,海产头足类软体动物干制品甲醛不合格率最高。结论唐山市市售干制水产品质量较好,但海米等个别样品不排除人为添加甲醛的可能。

Investigation of formaldehyde content of dehydrated aquatic products sold by Tangshan

Objective Understand the formaldehyde content of dehydrated aquatic products sold by Tangshan.Methods There were 4 kinds of dehydrated aquatic products from 4 regions of Tangshan contained 101 samples being collected.The determination of formaldehyde content used the acetylacetone spectrophotometry ruled by aquaculture industry standard of China of SC/T 3025—2006.Use SPSS13.0 statistical software for data analysis.This study used the limit(30mg/kg) that recommended by Liu Shuling1] as a standard to calculate the failure rate.Results The formaldehyde was relatively general in dry aquatic products and its detection rate was 100%.The formaldehyde content was in the range of 0.75~483.26 mg/kg.In all the samples,there were 30 samples containing formaldehyde over 30mg/kg and its rate was 29.70%.The highest formaldehyde content of the samples was dried shrimp and the lowest was dried prawn.The differences were statistically significant after analyzing the formaldehyde failure rate of different kinds of samples.The formaldehyde content of software dry products was the highest.Conclusion The quality of dehydrated aquatic products sold by Tangshan was good,but there were some samples like dried shrimps didn’t remove the possibility of increasing formaldehyde by people.
