| Abstract: | Chlorophyll is a particular and important nutriment in the green plants. How to protect chlorophyll is a difficult problem during the storage and processing of fruits and vegetables.This paper analyzed the characters of chlorophyll and the factors which affect the stability of the chlorophyll.A review of preserving green technologies of fruits and vegetables was given. |
