沙海参营养成分的研究

以干品沙海参为原料,对其营养成分进行研究,考察了沙海参的蛋白质、脂肪、水分、灰分、氨基酸以及金属元素含量差异,并研究了沙海参多糖的分子量和组成。实验结果表明,干品沙海参含有较多的蛋白质,其次是水分。其中鲜味氨基酸占蛋白质总量32·44%,抗氧化氨基酸含量14·79%,羟脯氨酸10·42%。沙海参多糖重均分子量(Mw)是98748Da,并含有较多的羟基、氨基、羧基、硫酸酯,都为硫酸软骨素E。
