摘    要:对黄酒的浸米浆水、酒药、酒母、酒曲、酒醪中微生物资源和其他米酒微生物资源的研究进展进行综述,并总结了黄酒微生物育种技术的发展成果。基于我国黄酒微生物的研究现状,利用现代生物技术提升黄酒微生物的研究水平,全面、深入和系统地研究黄酒微生物资源、多样性、系统发育、生态分布、酿造功能、菌种选育及其环境微生物对黄酒生产的影响等诸多课题,对于我国黄酒产业健康发展具有重要理论意义和应用价值。

Abstract:The research progresses of microbial resources in seriflux,xiaoqu,yeast starter,jiuqu,fermentation broth of Chinese ricewine and other ricewines were reviewed and the development results of microbial breeding technology in Chinese ricewine were concluded. In order to enhance the research level of microbiologies in Chinese ricewine, using modern biotechnologies to study the microbial resources, diversity, phylogenesis,ecological distribution,brewing function and breeding in Chinese ricewine and other environmental microbiologies which should have an impact on Chinese ricewine production. The study must be comprehensive,in-depth and systematical. It had important theoretical significance and application value on healthy development of Chinese ricewine industry.
