论中国饮食文化遗产的保护和申遗问题

饮食领域的文化遗产是世界文化遗产的重要组成部分。中国饮食文化的价值属于全世界，中外联合“申遗”是未来饮食文化遗产保护的重要运作模式。中国饮食文化具有历史属性、文化属性、现实属性以及普世属性。中国饮食文化遗产评价标准必须坚持“四个统一”原则，即原真性与创新性统一原则、全球化与民族化统一原则、科学观与历史观统一原则、动物解放与人类解放统一原则。倡议建立更加符合东方饮食文化遗产资源研究与保护的《保护亚洲饮食非物质文化遗产公约》，中国传统饮食文化作为东方饮食文化遗产的典型代表，应该积极地申报成为世界非物质文化遗产代表作，留住祖先餐桌的记忆。

On the Protection of and Heritage Application for the Cuisine Culture of China

The cultural heritage in the field of cuisine is an indispensable part of world heritage.The value of Chinese cuisine culture belongs to the world and an important mode of protecting the cultural heritage of cuisine is for China and relevant parties in the world to apply for world heritage in a joint manner.The Chinese cuisine bears historical,cultural,realistic and universal traits.In assessing the Chinese cuisine,there are four principles to abide by,namely,the combination between authenticity and creativity,between globalization and nationalization,between scientific and historic perspectives and between the liberation of animals and that of human beings.It is proposed that effort should be made to form The Convention of Protecting The Intangible Cultural Heritage Of Asian Cuisine.This Convention will make it possible to carry out a better-targeted research and protection of the heritage resources of oriental cuisine.As a typical representative of oriental cuisine,traditional cuisine of China should be registered as part of world intangible cultural heritage so that the memory of Chinese ancestors’dinning table can be kept alive.
