纳豆菌蛋白酶水解玉米醇溶蛋白制备血管紧张素转化酶抑制肽

摘    要:利用纳豆菌固态发酵产酶酶解玉米醇溶蛋白,酶解物经SephadexG-25分离纯化,对产物及其组分血管紧张素转化酶(ACE)抑制活性进行检测。结果表明,酶解血管紧张素转化酶的抑制活性为77.83%,经分离后组分3的抑制效果最好,可达89.4%。

Abstract:Zein was hydrolyzed by the proteases produced by Bacillus natto in solid fermentation. The hydrolysates were separated and purified by sephadex G-25. The inhibitory activity of zein hydrolysates to angiotensin converting enzyme (ACE) were detected. The results showed that the inhibitory activity of zein hydrolysates to ACE was 77.83%. After separation, the component 3 displayed the highest inhibitory activity of 89.4%.
