| Abstract: | Ferulic acid is one of the effective ingredients in root of angelica. The optimum procedure to extract ferulic acid from root of angelica with ethyl alcohol and the anti - free - radical nature of ferulic acid were investigated. The application of ferulic acid as an oil anti - oxidant in foods was also discussed. |
