摘    要:阿魏酸是中药当归的有效成分之一,本文研究了用醇提取法从当归中提取阿魏酸的最佳方案及抗自由基的性质,并且探讨了阿魏酸作为食品抗氧化剂对油脂抗氧化作用的应用。

Abstract:Ferulic acid is one of the effective ingredients in root of angelica. The optimum procedure to extract ferulic acid from root of angelica with ethyl alcohol and the anti - free - radical nature of ferulic acid were investigated. The application of ferulic acid as an oil anti - oxidant in foods was also discussed.
