麦糟的综合利用研究

Comprehensive utilization for brewer's spent grain

Brewer's spent grain is the main by-product of brewing industry, which is the residue after saccharification and filtration of the mash of malt and excipients, it is rich in polysaccharides (cellulose, hemicelluloses), lignin, protein and so on. Wheat grains contain high moisture level and rich in nutrients, and easy to be contaminated. As a result, it is mainly used in animal feed with little economic benefits and little added value. The polysaccharide and protein contained in brewer's spent grain had potential application value. The applications of brewer's spent grain in various industries such as animal feed, food, swage treatment, fermentation media and so on were summarized. It provided a reference for further developing the application field and improving the economic benefit of brewer's spent grain.
