卵转铁蛋白生物活性肽功能研究进展

蛋清中的卵转铁蛋白具有多种生物活性和功能特性,使其成为获得生物活性肽的重要蛋白。卵转铁蛋白经水解后主要产生具有抗菌、抗病毒、抗炎、抗肿瘤、抗氧化、抑制血管紧张素转换酶(angiotensin converting enzyme,ACE)活性等各种功能的生物活性肽,能为人体健康提供巨大的益处,受到广泛关注。为此,本文综述了近年来国内外关于卵转铁蛋白功能肽的制备、肽的生物学活性研究进展及其作为防御和治疗药物原料的潜在应用前景,以期为功能性肽的开发和利用奠定基础。

Functionality of Bioactive Peptides Derived from Ovotransferrin

Ovotransferrin in egg white has multiple biological activitiesand functional properties, which makesit an important protein for bioactive peptide production. The hydrolyzed ovoltransferrin mainly produces bioactive peptides with various functions of antibacterial, antiviral, anti-inflammatory, antitumor, antioxidant, and inhibitory activities of angiotensin converting enzyme (ACE), which can provide great benefits for human health and attract more and more attention.In this paper, the preparation of ovotransferrin functional peptides, the biological activities of functional peptides and its potential application as functional food and therapeutic drug raw materials were reviewed in order to lay a foundation for the development and utilization of functional peptides.
