| 摘 要： | 研究了高梁红色素对自由基和不同种类油脂的抗氧化作用,并阐述了高梁红色素的抗氧化机理.结果表明:高梁红色素具有良好的抗氧化能力,优于BHT,具有作为色素及抗氧化剂使用的双重功效.

| Abstract: | The antioxidant behavior of sorghum pigment on DPPH and oils and the related activity-structure relationships were investigated in this study.The result showed: the antioxidation activities of sorghum pigment were better than BHT,it can be used to serve a dual purpose and pigment as antioxidant. |
